After a successful entry into the sparkling wine market with our award winning Millesime Brut 2008, made in the Traditional or “Champenoise” Method, our next step was to research the technological developments that had taken place in the more than 300 years since the discovery of traditional sparkling wine attributed to Dom Pérignon in 1690.

In 1907, the French oenologist Eugene Charmat developed a system that permitted secondary fermentation in steel tanks specially designed to withstand high pressures, and of much larger size than the bottles used in the Traditional Method. This process is now known as the Charmat Method and, together with the Traditional Method of secondary fermentation in the bottle, are the only two systems legally allowed in Chile to produce sparkling wines.

In 2014 we introduced our first autoclaves or pressure tanks to produce Echeverría sparkling wines with the Charmat Method (also known as Charmat-Martinotti. These tanks, fabricated with the most advanced technology available to date, allow total control of the process of secondary fermentation. They are part of a complete isobaric environment that includes the subsequent filtration, bottling, and corking, without any loss of the pressure obtained during the secondary fermentation.

These technological advances, coupled with the long tradition and experience of Viña Echeverría, have enabled us to obtain young, fresh and aromatic sparkling wines, with a pleasant balance between acidity and sweetness, delicate and persistent bubbles; body and complexity that harmonize perfectly with the delicate aromas and flavours of Chardonnay and Pinot Noir grapes.

Today and in tune with the preferences of our markets, we have structured our complete line of NINA Charmat sparkling wines, which are now offered to our customers worldwide. We have named them “NINA”, as a tribute to Nina Luz, the winemaker´s vivacious grandmother; a lover of life and of sparkling wine.

NINA BRUT NATURE
Sparkling wine made from Chardonnay and Pinot Noir grapes which provide a superior and elegant character. With abundant small and persistent bubbles, it has delicate and complex fruit aromas that elegantly combine with yeasty notes of brioche. With no sugar added, in the palate is dry and fresh, with lively acidity. A perfect sparkling wine to serve as an aperitif or to pair with
fresh shellfish like oysters. Also is a perfect match for cocktails.

NINA BRUT Blanc de Blancs
A vibrant sparkling wine, made from only Chardonnay grapes. Brilliant pale with green hues and light persistent bubbles. On the nose, fresh apples and pears mingle harmoniously with sweet yeasty notes. In the mouth, this fresh and mouth-watering wine delights with flavours of orchard fruits, and offers a lingering fruity finish. A wine to enjoy by itself or with any food, from aperitifs to main courses and fresh salads and fruits.

NINA BRUT ROSÉ
Sparkling wine is made with Pinot Noir grapes. Reminiscent of the colour of Provence Rosé, this elegant sparkling wine has pinky-orange tones and small persistent bubbles. On the nose gives aromas of wild strawberry and vanilla. In the mouth, its racy acidity balances well with notes of summer fruits. A delightful aperitif or accompaniment to light dishes or mildly spiced dishes. Also great with seared tuna and salmon. And of course, just on its own.

NINA DEMI SEC
An easy-drinking sparkling wine with a touch of sweetness. Pale with yellow hues and small persistent bubbles. On the nose, fresh and inviting aromas of citrus with hints of brioche. In the mouth, well-balanced acidity combines with more mouth-watering citrus flavours with a slightly sweet buttery finish. A playful wine, ideal as an aperitif or to accompany food with sweetness, like Thai food and desserts.
