Valley: Central Valley (Entre Cordillera) from a selection of different valleys in the Central region, including Curico, Maule and Colchagua.

Climatic conditions: Mediterranean with a long, dry summer season and intense sunlight. Marked DTR (Diurnal Temperature Range, or difference between day and night temperatures), key for assisting the development of flavors.

Vintage & Harvest

Blend: Carmenère grapes, from ungrafted selected clones of pre-phylloxera French rootstock.

Harvest:

  • April 27th, 2021.
  • Hand-picked in 18 kg. boxes and carried to the winery immediately after cutting.
  • Carefully selected before processing.
Winemaking

Vinification:

  • Fermented in stainless steel tanks for 10 days at 25-28° C controlled temperature to dryness.
  • 100% malolactic fermentation.
  • Processed and stored in temperature controlled stainless steel tanks through bottling.

Roberto Echeverría Jr has been the Chief Winemaker at Viña Echeverría since 2001. Inspired by his French heritage, Roberto’s signature style produces wines with a combination of Old World elegance and New World energy. More European viticultural techniques include timely harvesting to avoid over ripeness and therefore good balance and control of alcohol levels. Focus is on French varietals, barrels and yeasts, as well as longer fermentation and aging in barrels and diverse blending.

Tasting Notes
Fruity and lively, with a rich mouthful of exquisite red pepper and mature cherries, a smooth palate and a nice fruity finish.
Food Pairings

Carmenère’s slightly herbaceous character make it a great accompaniment to herby dishes, especially lamb with herbs – salsa verde for example or lamb curry with herbs. Middle-eastern style meatballs or minced lamb kebabs with mint and coriander also complement well.
Also works well with bacon, think spinach, bacon and blue cheese salad, as well as roasted or grilled Mediterranean vegetables, or chicken or pork cooked with peppers

A great match for Mexican and Thai food also, due to its spicy, fruity characteristics.
