Vineyard
Valley: Maipo Valley (Entre Cordilleras)

The vineyards are located in Maipo Alto in the Central Valley. Alto Maipo reaches into the foothills and produces some of Chile’s leading Cabernet Sauvignons. Central Maipo is one of the country’s oldest and most diverse productive regions.

Rising into the Andean foothills, the Alto Maipo section ranges from 400 to 800 meters above sea level and is highly influenced by the mountains themselves. The afternoon sun warms the vineyards and the cool mountains breezes that slide down the hillsides at night create a broad oscillation between daytime and night-time temperatures, all of which makes for perfect conditions for bold yet elegant red wines, especially the regional star, Cabernet Sauvignon.

Vintage & Harvest

Blend:

  • 85% Cabernet Sauvignon
  • 5% Petit Verdot
  • 5% Carménère
  • 5% Petit Syrah

Harvest:

  • Cabernet Sauvignon: April 17th, 2017
  • Petit Verdot: March 31st, 2017
  • Carménère: April 21st, 2017
  • Petit Syrah: April 14th, 2017
  • Hand-picked in 18 kg. boxes and carried to the winery immediately after cutting.
  • Carefully selected before processing.
Winemaking
Vinification:

  • Fermented in 15.000 and 25.000 liter stainless steel tanks for 7-10 days at 25-28ºC controlled temperature to dryness with selected and native yeasts (80/20).
  • Extended maceration for additional 3 – 5 days.
  • 100% malolactic fermentation.
  • 225 liter new French oak barrels for 12 months.

Roberto Echeverría Jr has been the Chief Winemaker at Viña Echeverría since 2001. Inspired by his French heritage, Roberto’s signature style produces wines with a combination of Old World elegance and New World energy. More European viticultural techniques include timely harvesting to avoid over ripeness and therefore good balance and control of alcohol levels. Focus is on French varietals, barrels and yeasts, as well as longer fermentation and aging in barrels and diverse blending.

Tasting Notes
Opaque purple with pink hues, offers intense aromas of cherries and strawberries which combine with delicate notes of coffee, spice and tobacco. In the mouth, fresh and elegant with round and delicate tannins and a long and juicy finish.
Food Pairings
The Carménère and Carignan in this rich and juicy wine add extra fruity and earthy qualities to the elegant Cabernet Sauvignon. It pairs really well with Southern French or Mediterranean food, especially Toulouse sausages and red meat such as beef or lamb, as well as ratatouille or roasted vegetables. Great also with dishes with a hint of fruit, such as lamb tagine, baked eggplant or dishes with mushrooms.
